You just need three well-chosen ingredients, a bit of patience, and a good freezer. The result is a creamy, frank ice cream that keeps the natural grain of the pistachio and the roundness of the honey.

The ingredients (for 6 scoops)

  • 500 g of full-fat Greek yogurt (10% fat minimum - skimmed yogurt gives a crumbly ice cream, hard as a stone)
  • 100 g of pure pistachio paste (ideally from Bronte or Sicily - the color is more earthy than fluorescent: it's a good sign)
  • 100 g of liquid honey (acacia, or spring flowers - a sweet honey, not too strong)
  • 30 g of crushed pistachios (for the finish)
  • 1 pinch of fleur de sel

Step-by-step

The mixture, ten minutes in total. Take the yogurt out of the fridge so it loses some of its freshness. In a large bowl, whisk together the Greek yogurt, pistachio paste, and honey.
