  • 900 ml of hot water or vegetable broth
  • Salt, pepper

Greek yogurt with garlic and lemon

  • 250 g of thick Greek yogurt
  • 1 clove of garlic finely grated
  • 1 tbsp of lemon juice
  • 1 tbsp of olive oil
  • Salt, pepper

To serve: fresh parsley or coriander, olive oil, a few mint leaves if you have them.

The steps

  1. Sweat the onion in a large skillet with the olive oil, 5 minutes over low heat. Add the garlic, stir for 30 seconds.
  2. Spices: add cumin, coriander, smoked paprika, chili. Stir for 30 seconds to release the aromas.
  3. Tomato: add the tomato paste, stir, then the can of crushed tomatoes. Salt, pepper. Let simmer for 2 minutes.
  4. Lentils + pasta + liquid: add the red lentils, the pasta, and the hot water (or broth). Mix well.
  5. Cook covered for 12-15 minutes over medium-low heat, stirring two or three times to prevent sticking. The pasta cooks, the lentils fall apart, the sauce thickens on its own.
  6. Adjust: if it's too thick at the end of cooking, add a little hot water. Adjust salt-pepper.
  7. Yogurt: while it cooks, whisk the Greek yogurt with the grated garlic, lemon, olive oil, salt, pepper.
  8. Serve: pour the pasta into the hollow plates, a nice quenelle of yogurt on top, a turn of the mill, fresh herbs, drizzle of olive oil.
